Smith J. St. Juste - Co-Owner / Executive Chef

Chef Smith St. Juste honed his skills at the prestigious Johnson & Wales University. For more than a decade, St. Juste has been perfecting his craft working with prominent hotel chains in the Stamford area including Marriott and The Westin.
As a Restaurant Chef of the Stamford Hotel & Spa, he captured the spirit of innovative 21st‐century dining with a distinctive blend of Contemporary American cuisine infused with a twist. A native of Haiti, St‐Juste not only has a flair for Caribbean Comfort Cuisine but also for plating and presentation where he combines different textures on a plate and add elements of creativity to the composition. His managerial skills and culinary expertise helped him to concurrently launch a thriving and successful catering company, followed by the launch of Maddy's Food Truck.
During the past 3 years, St. Juste has worked as the District Executive Chef of the Stamford Public Schools. In this position, St. Juste crafted menus, prepared nutritious meals and trained well over 20 managers to help eliminate the stigma of the public school lunch system. Now as Executive Chef / Co‐Owner of La Perle Restaurant & Bar in Stamford CT, Chef St. Juste is eager to help launch the areas only devoted American‐Caribbean full service fusion restaurant that straddles the borders of multiple cuisines with its melding of domestic and global ingredients with far‐flung techniques.
Chef St. Juste will infuse his passion, creativity, appetite for great ingredients and bold flavor with respect for the integrity and quality of his ingredient driven menu that will entice patrons to experience a memorable meal.

 

Peter Medoit - Co-Owner / Executive Director of Operations

Peter Medoit studied Architecture at Roger Williams University followed by nearly a decade and a half of working with Prominent high-end Architecture firms in New Canaan, CT,  Greenwich, CT and New York City. His attention to detail has allowed him to work on multi-million-dollar design projects of all scopes both domestically and internationally. Peter’s mission is to help create the best Caribbean-American full-service fusion restaurant in the area that connects with the people that live and work within the community. Peter’s creativity, attention to detail, proven leadership experience, extensive success building successful teams all while being familiar with cutting edge operation techniques that drive performance allows him to play a vital role at La Perle.

 

Harold Jean-Felix - Co-Owner /  Public Relations Manager

Harold Jean‐Felix has worked in the commercial shipping and customer service industry for over 15 years. The focus of Harold at La Perle is in fostering successful partnership by ensuring strategies are sustainable for business objectives in the areas of customer relations, diversity, and event coordination. Harold has held numerous operational and customer service based positions for a variety of operations from small to large independent companies. He has been responsible for planning strategic objectives, reporting and monitoring performance. Harold's varied experience allows him to combine theoretical know how with practical knowledge and solutions. Harold's passion for hospitality, commitment to quality, and dedication to excellence makes him a great asset to our team.

 

Suzanne Radlein - General Manager

Suzanne Radlein is a graduate of the University of Connecticut with over two decades of dynamic hospitality and restaurant business experience in middle and management levels. Suzanne has a proven track record of excellence in maximizing guest satisfaction, maintaining high standards of food and service, directing and leading to desired results. She is an enthusiastic manager with drive, determination and passion. She is also an excellent communicator with an engaging personality who brings extensive and relevant knowledge of good food and wine. Suzanne has many certifications and her additional experience includes being a bartender. With an eye for detail and the ability to drive consistent company standards while achieving company goals with grace and energy, Suzanne is a great addition to our team.
